What would be the best fluid to use for manual trans fluid change and how much fluid for a 2002 Gt with a 3650 trans.

I'd suggest Amsoil Syncromesh.

Nothing against Amsoil, I use it in everything but not a fan of synthetic fluids in a 3650 or T-56. Tremec says has to do with the friction material on the syncros or something like that.

^^^ Yup went through the same thing with my Bullitt. Put in synthetic in the tranny shortly after drained it and put back the OEM spec fluid. With the synthetic I found the gears weren't engaging smoothly.

In our experience, Amsoil Syncromesh, nothing but improved shifting and reduced noise. However, time after time synthetic ATF has caused notchy shifting and in some, grinding.
For an extreme use T56 (track days), worth stepping up to Chryslers Viper spec trans fluid. It does however have a couple of small downsides, notchy cold for the first three or four blocks plus its pretty pricey. Street only car, Syncromesh works awesome there as well.

And consider getting the transfer pump. It's cheap, works great, and way easier! ....on my car anyway, not sure about the newer ones.

I wonder what the Chrysler Viper spec trans fluid is?

I know I went and bought 2 litres of Chrysler manual transmission fluid for my jeep. I nearly died when it was $40/litre....

I called Tremec and spoke to a Tech about the best fluid for my TR-6060
and they recommended Mobil 1 synthetic ATF. I made the switch and I have noticed smoother shifting.

I'm not sure what the stock fill on the TR-3650 is but my TR-6060 was Dextron III.
